    How much baby sitting does this guy require? I don't mind checking it every couple of hours, but I defiantly don't want to have to sit by it all day. I'm also entertaining the GOSM and the Lowes BBQ Grillware smoker.

    It may just be my inexperience, but I couldn't get the thing to smoke worth a flip. It doesn't hold much wood, so I would put my wood soaked chips in there and they would burn up not long after they actually started smoking... So I tried adding a little more wood, which still wasn't alot, but...

    I'm tinkering with the idea of getting a smoker. I had a MES but I hated that thing. So I was at home depot and saw what I guess is the new Brinkman square verticle smoker. It has 2 doors on it, one for the meat and one for the fire. I've searched and I can't find any other info on this guy...

    Smoked, Thank you very much for the detailed info. If you follow the link on that page for curing, it will take you here. They classify brining as curing in a water solution. That is probably why I was confused. So, with your answer in mind and from what I've read, unless I am cold smoking...
