    I agree about it being tough to get things on camera. You seem to get the neatest reaction to something you never anticipated and no reaction at all if you try to duplicate the moment. It's all great though!

    Dave, Welcome from another MES owner. I know you'll enjoy the smoking on it. The MES makes many parts of smoking fairly straight forward. Ask lots of questions, there's no dumb ones around here.

    I love beef ribs, and unfortunatley they are expensive around here. I do mine using the 3-2-1 method and do not cut them apart before somking. I personally like them with Jeff's rub and some sauce on the side. Personally, I'd take them any day over pork ribs.

    hickory splits nice, it is hard to cut. In general, I've always found harder woods split better than softer woods.
