No evergreen, soft woods for smoking.

This is a true story.  Take it for what it is worth but I will live by it.  I smoke a lot of pork, fish, venison, beef, turkey.  I was always of the understanding that hard woods only should be used to smoke.  And under stood to never use a tree wood with needles or that does not lose its...

Venison spare ribs for the first time

I never would have believed how good these can be.  2.5 hours with a salt/garlic, pepper rub and one light smoke with cherry wood.  Another 2.5 hours in a covered pan with 1/2 pint of apple juice poured over them and then out of the pan back onto the smoker rack and smothered with my favorite...

Sorry for posting on the wrong forum Fermenting meat

Thanks for the input crazymoon.  From what I have always understood about fermentation of any kind with lactobacillus is that it only can go as far as the sugars (and other bacteria foods) in the meat or vegetable your are fermenting will allow it to go, so it is pretty safe from that aspect...

Sorry for posting on the wrong forum Fermenting meat

I am an avid producer of pro biotic cabbage,   AKA Polish sauerkraut made the natural way. Now, that being said, Sauerkraut is made from "lactobacillus" that overcomes the bad bacterial in cabbage with the use of salt. So now can I use some lactobactilllus liquid to inoculate my sausage so it...

How did you come up with your screen name?

The stories are so long about my dog that I will not bore you with it.  Here is the short version about "aquacanis"  It is Latin for "water dog"  I used to raise labrador retrievers and had a runt that I could not sell.  She was gentle, kind, and loved all my four kids above all else. When she...

You best be trying some of that Texas wild boar in the smoker.   I try to shoot one every year when I am in Texas.  It makes great sausage.

Sorry, I hope this attempt works

I think I lost the last attempt.  Here goes.  I am 71 years old and still willing to learn.  I have been smoking home made sausage for the last 15 or so years (maybe twenty).  I love doing it and I love smoking it, and I love eating the finished product and giving it for gifts.   I have been...

I will try again to ask why people say they can't smoke in cold weather with the MES

I have read many, many emails and net comments about my Masterbuilt 30" smoker that I was afraid I would not be able to fast smoke, slow smoke, or even cook on it when it was below 30 degrees F.  So I went rube goldberg with a insulating idea.  I used space blankets.  The plastic blankets have a...

What am I missing about Masterbuilt 30" electric remote control smoker?

I have read all the negative stuff posted about this smoker not working in colder weather because it will not keep up to temperature.  So I attempted to make a rube goldburg solution.  After much consideration and research on the melting temperature of the space blankets you buy for 10 for 6.95...
