SoFlaQuer's Finishing Sauce (For Pulled Pork)

I have a quick question on the ingredients. I went to Wal-mart to get the Tony Chachere's Cajun Seasoning but only found Tony Chachere's Creole Seasoning. Is this the same thing or at least close enough to use?

    Questions on my pulled pork

Our cookie cooling pans are actualy designed to hold pies as well and have legs that raise them up about 3" so they are pretty tall. As long as it is higher than the juices the smoke should still penetrate the meat on the bottom as well as the top right? What about health issues?

    Questions on my pulled pork

I had one last question about this smoke. I thought about using a foil pan underneath the meat to catch the juice. I had thought of two ways to do this. 1. Put the foil pan on a lower rack. 2. Place a cookie cooling rack in the pan to keep the pork out of the juices. #2 would work better...

    Questions on my pulled pork

Thanks everyone. I am glad that the foil doesn't effect the probe. The meat seemed quite a bit drier at the open point. It was small so not a big problem but it wont be a problem at all next time! The only reason I checked for the smoke ring is because this is my first big smoke and I wanted...

    Questions on my pulled pork

I am using my GOSM. I was wondering if not using charcoal had something to do with it. I think next time I will add a couple chunks to the chips to see if that helps. Thanks!

    Questions on my pulled pork

I did my first successful pulled pork smoke this weekend. I followed the instructions in the pulled pork sticky and it turned out great. I also did a couple fattys and some ABTs. I do have a couple of questions I was hoping you could help me with. 1. I wrapped the pork in foil once it hit...

New Smoker and My First Fatty

I kept the temp between 225 and 250 for about two hours. That was when the shorter pieces read a little over 160 degrees. The longer pieces had a higher temp than the shorter but I think that is because there was cheese in the middle. I'm not sure though, any opinions. They seemed to be...

New Smoker and My First Fatty

I am glad that my father-in-law will get to enjoy smoking though I was a bit reluctant to part with my link to charcoal smoking. Oh well, I'll have to get another bigger one some day.

I want to buy a GOSM big block. Now what?

I definately think that getting the big block is the right way to go. I have seen the smaller ones at Walmart and there is a large size difference. As far as racks and covers, when I was purchasing my big block from Epod2000, they had covers and extra grills there. I can't imagine four not...

New Smoker and My First Fatty

Thanks everyone. I had just done some yardwork and there is a fine coat of dust over a number of items on the porch. The little red smoker has done some very good work for me. Now that I have the GOSM, he is getting a new home though. I told my father-in-law that he could have it. Gotta...

    First Pic Attempt

I still don't really understand but it is 11:00 and I am beat so maybe it's just me. I'll have to look through it more tomorrow. Thanks for your help! Just like with smoking, with practice I am sure I will get there.

New Smoker and My First Fatty

It's Done! Actually, I don't know if I can call them fattys since I made them pretty thin. I was hoping to cook them fast. I'll try and post some pics. Keep your fingers crossed. I made four fattys from three pounds of JD sausage. I made one plain, one with pepperjack cheese, one with...

    First Pic Attempt

I am so new to this I am not really sure what you mean. When I go to My Images in Image Shack, I see six lines of code for each image. Is that what you mean? You use the fifth line? The bowl has pepperjack cheese in it.
