    Temps running all over the place this morning,on the Austin XL

    Cooking with the lid open on my pellet smoker

    I just bought the Pitt Boss Austin XL Smoker,and like it so far.Can I cook steak subs on it with the lid open?I have a flat top that I'd put on the grates,and will cook on that.Just not sure if the smoker will get hot enough with the lid open Thanks,Bill

    Question about using my char-griller for making deer jerky.

    Last year I used my acorn grill for making jerky.I didn't get much of a smokey taste.I think that I will get a better result if I use the char-griller.Do I build the fire in the fire box,or does it need to be in the the main chamber,with the meat? Thanks,Bill

    Results from my first cheese smoke

    Christmas Eve I cut up some cheese that I smoked two weeks ago.Both my son & grandson,said it was nasty.I thought it was great.My son said that it was too smokey.I tasted a hint of smoke,nothing over powering.So i'll let the rest stay in the fridge a little longer.
