I guess there not much to say about smoke catfish here, but it is a good dish to cook up here in Ar. the only thing about it to have a good rub for it. after 3 hour of smokin it, it just fall apart as you pulling it out of the smoker.
Why do most people pick beef over pork as in beef is more dry, pork is more moist and taste the best with good flavor when I run the wagon I ran out of beef, but got pork. some say they don't eat pork because they (hog) eat dirt. what you think

Well I start at 9:30 am by washing the meat, rub them,cover in foil in smoker for 4hrs at 225, then uncover and cook for 12 more hrs at 190-200 I was cooking 100 lb of beef and 80 lb of pork and got it done around 12:00-2:00 in morning. Was long day but enjoy it. After remove from smoker refoil...
Have anybody done smoke catfish, up here in Ar. it became a big hits and cannot keep them on hand soon as I'm done cooking them here come the crowd... but it keep me going back to the store for more. I like to hear from other about there.
