Thanks to all for the incredibly warm welcome.  I have been sidetracked on another project lately (new night vision rig for my hog gun).  I haven't rolled out the masterbuilt for a while, but I will have to soon as I am starting to jones for some properly smoked BBQ again.

Thankya Simon Templar and Phatbac.  Glad to make your acquaintance. That Carolina Smokers gathering sounds nice indeed.  I am tempted to make an appearance. Scott

PRIME RIB, SMOKED, SOUS VIDE, & TORCHED, AN EXPERIMENT

I have an inexpensive Ziploc vacuum sealer.  It does a poor job of vacuum sealing anything that has juices that foul up the ability of the heat bar to work.  It is a weak unit truly.

PRIME RIB, SMOKED, SOUS VIDE, & TORCHED, AN EXPERIMENT

I have a Nomiku Gen 1 Sous Vide (looks like a cartoon cross between a plastic flower and a marital aid LOL).  Have had some success using it, but have never really knocked it out of the park.  I haven't done more than really basic type cooking with it.  Holds temp within one degree F...

Picked up a Masterbuilt Signature 30 cheap

I could not agree more. I see soooo many design flaws on this thing. If they abandoned using the chip tube as only a chip delivery system and made the chip box much larger with adjustable height off the burner from the outside, it would truly be good at it's job. I could do a lot with that...

Not the ruby red brats I am used to, but the flavor is really good nonetheless. My profile pic shows the beautiful red color of my brats from the propane rig. Finally got some good smoke flavor. I can work with this. Hope is restored. Thank you gents for taking the time to write...

Picked up a Masterbuilt Signature 30 cheap

Trying an experiment. Opened top vent all the way and pulled out the chip adding tube about 4". Started heating it up. Went inside and put chips in tray, then added a more or less form fitting chip tray inner layer made out of flashing and then added a top cover made out of flashing over that...

Picked up a Masterbuilt Signature 30 cheap

I get a fine layer of white ash over the top of my chips when I pull the tray. They are combusting when hot air currents eddy over the edge of the tray. I thought about cutting a piece of aluminum flashing to fit tightly down inside the chip tray over the top of the chips. Any gasses they put...

Thanks for the warm welcome fellas.  This looks like just the locale to help me better my BBQ skillset and maybe help someone else while I'm at it.

Picked up a Masterbuilt Signature 30 cheap

Picked this new baby up at Lowes this Saturday for $119.40 plus tax. Dented and they thought it was missing the chip adding tube. It had everything inside in boxes, so that gamble paid off. Gave my well used medium sized vertical propane smoker to my brother. I know how to use that beast...

Hi. I'm a 46 year old nerd that cooks and messes with firearms and 3D printers in my spare time. Had a medium sized propane vertical smoker and gave it away when I got my Masterbuilt Signature Series 30" digital electric smoker. Have had very poor results thus far compared to my propane...
