    pork shoulder

    Moin yesterday i made a pig shoulder in the wood fired oven. i started by 160°C at 09:30. two hours before the shoulder was finished I made another fire to increase the temperature in the oven. The oven had than a temperature from 280°C. we start to eat at 19:00 the meat temperature was 81°C.

    hello i smoked this Turkey 3 weeks ago. I put the turkey for 24 hours in a brine then smoked the turkey for 4-5 Hours at 130°C. In the end I raised the temperature a bit more.
