    FYI: Victoronix Knives Are Sharp

It’s definitely a lesson learned. The wife has a part time job at Bed Bath and Beyond and she’s always bringing stuff home. I guess that I’ll have to tell her to get me a scraper.

    FYI: Victoronix Knives Are Sharp

Last weekend I touched up all of my knives. Today I was cutting some salmon to make Salmon Candy. I would cube and then scoop with the knife to toss into the bowl. Well as I pushed the salmon off of the knife I caught my thumb. Had to put a glove on to finish. Of course the kids were complaining...

Opinions? Pork Left Out for 2 Days

You’re right Legs, I’m hoping that this is a lesson that I only have to learn once. Sparky, I know what you’re saying but I still might experiment with half of it. Of course I won’t smoke it completely through, just for a couple of hours for taste and smell. Don’t forget that when we leave a...

Opinions? Pork Left Out for 2 Days

Well I guess that it’ll become chunked up trapping bait then. Now I’m wondering if I should still throw some smoke on it prior to putting it in my trapping freezer.

Opinions? Pork Left Out for 2 Days

The other day while jostling meat back and forth between the meat fridge and freezer I set a 10lb whole pork loin that is vacuum sealed on the table next to the fridge. As I grabbed meat, etc... to go upstairs I completely forgot about it. The temperature in the basement is approximately 55-65...

    Canadian Bacon Bearcarver’s Way

Wow, ok. I did exactly what you did with the TQ and brown sugar. I’d thought about the brown sugar but just like the cure it’s washed off prior to smoking, etc... Unless it really seeps into the meat during the curing process.

    Canadian Bacon Bearcarver’s Way

Bear, we’re y able to speak to Todd about whether or not Sugar Maple is, or will be, available in 2lb, 5lb, and/or 20lb bags? I know I want 20lb myself.

    Canadian Bacon Bearcarver’s Way

Fellas, I too went on there looking and couldn’t find it. I will take a pic of the bag when I get home and post it. Maybe it’s a flavor that didn’t do too well or something. I see new flavors listed that weren’t there a few months ago when I was on the site. Stand by

    Canadian Bacon Bearcarver’s Way

I understand, it would've been nice to meet up anyways. I know that I'll be ordering more of the Maple Sugar soon. I only had a 2lb bag and that dog just ain't gunna hunt. I'm going to need a 20lb bag now. I might just try everything pork with those pellets. I'm worried though, I've talked...

    Canadian Bacon Bearcarver’s Way

Bear, the pellets are from AMNPS. I think I remember that his name is Todd. I know that you know his name. But he's the one that I got the pellets from. Are you going to The Great American Outdoor Show this week? I'll be there on Friday if you'd like to meet up and I'll give you some to try.

    Canadian Bacon Bearcarver’s Way

I sliced it rather thin. I wish that I would have done half of it thicker now. It’ll still be awesome with some eggs. My son wants to make some Eggs Benedict this weekend with it.

Farmer, I really do. The flavor imparted is also absolutely amazing. I used two full rows on my 5x8 Maze.

    Canadian Bacon Bearcarver’s Way

John, I literally owe it all to you and AMNPS. Without the two of you I never would have been able to do it. I’d have had to find a different recipe.

    Canadian Bacon Bearcarver’s Way

HOLY SMOKES!!!!!! (Pun intended) We have found astounding success. This Canadian bacon is actually better than anything I could have imagined. I was extremely worried about how dark it got, thinking that I over smoked it. I used Maple Sugar pellets from AMNPS. I swear to you that I can taste...
