Maple Sugar will last for ever as long as you keep it in a sealed container.
It is nice that you are offering it to others but why not use it in other recipes? You can replace maple sugar 1 for 1 with either white sugar or brown sugar.
For next time, a way to cut the foaming down just add a few drops of oil. It could be vegetable, canola, sunflower, etc. You can even use butter. Just add enough to get the foaming under control.
