Maple Sugar will last for ever as long as you keep it in a sealed container.

It is nice that you are offering it to others but why not use it in other recipes? You can replace maple sugar 1 for 1 with either white sugar or brown sugar.

For next time, a way to cut the foaming down just add a few drops of oil. It could be vegetable, canola, sunflower, etc. You can even use butter. Just add enough to get the foaming under control.

Sounds pretty simple. If you are looking for a high quality product close, seek out Milroy Farms. They are about 2 hours West of you. Great syrup, especially the richly flavored Grade B, candy and sugar reasonably priced. Too far to drive? Shipping in PA is cheap and the Blocher's are a pleasure to deal with giving outstanding customer service...JJ
