Cold Smoked Hard Boiled eggs

When I smoke cheese, I let it rest then vac pack and let it mellow for a month. But now I want to smoke some eggs also. So can I eat them right away, or they have to mellow?
 
Not sure what they taste like when you let them mellow , mine never last more then an hour !

The Mrs. hosted her family's annual get together dinner (not a full blown reunion... just siblings, their spouses, and kids) back in October so I smoked some cheese for the occasion a few weeks ahead of time. Feeling adventurous, I decided to try smoking some eggs the day before for her to make deviled eggs with. I cold smoked 2-1/2 dozen with cherry sawdust for 3 hrs until they had a light amber color and of course had to taste test a few. OMG!! I love hard boiled eggs and this was like taking them from status quo to phenomenally good!! Needless to say, they were an out of the park home run and didn't last very long which makes me wish I would have smoked another 1/2 doz and hid them for myself! Gonna do a batch up for Xmas this year and dust the deviled ones them with some smoked paprika just to kick them up that "extra notch" as Emiril would say!

I would recommend skipping the boiling part and hot smoke them. It usually takes about an hour and a half to two hours at 225*F and the smoke is fairly light when done in shell.
