My second attempt at a coppa/cappocolo. Nearly done - 30% weight loss so far, but still a bit soft, so I'll leave it a little more.
But I've just noticed, it sparkles! It glitters in the light like a christmas tree! I cured it using Prage powder No 2 - salt with sodium nitrite and potassium nitrate. I was careful not to use too much, gave it a good long cure and rinsed it thoroughly. Video isn't too good but you can just see pinpoints of light catching it as it moves. Weird.
Is this normal? Is it OK?
