Using rosemary in my ground beef and fresh sausage

I want to start using rosemary as an antioxidant in my ground beef and fresh pork sausage I grind and freeze for my family and friends. I was hoping when I ordered the rosemary from Butchers it would contain grams/pound or some other measure of addition. Can anyone help me?

Is their some reason you wanted to choose rosemary? I know there are plenty of foods that have antioxidants and a bunch of herbs.. I'm not sure how high on the list that rosemary is. I would think that the oil of rosemary may be high on the list.

Johnny B. When I was with FL Foods back in early 2000 we used Rosemary as both an antioxidant and because it was said to contain color retention properties. That is the basis for my decision to use it at home. If there is something better I will gladly use it. I am open to all suggestions. Sincere thanks. Jborque

Cool.. hope you can get a good adjusted recipe and use it. Rosemary is always one of the easier plants to grow at home too.
 
I love rosemary and I have some ready for cutting now. If I'm lucky it might overwinter this time, never know.

I visited a friend outside Pasadena, and he was trimming his pesky rosemary down from shoulder height to waist height. I took a big bunch of it, stuck it in my suitcase, and when I got home there was a polite note saying my luggage had been inspected. Must have triggered the dog.
 
Rosemary is one of my favorites. I do a rosemary/crushed garlic coated pork tenderloin. The meat is coated with large amounts of the herbs then smoked. Love it.
You'll just have to wing it until you get the amount of rosemary that's just right for your family.

Hah! "herb sniffing dog" A buddy of mine was given Rosemary trimmed like a x-mas tree in a festive pot.He planted it outside in the spring and the thing grew and grew.A few years later he had to trim it back too as it was chest high.Strange that it was so hardy in our climate here in Va.
