Only thing I didn't like about the MES pellets wwer they weren't insulated like the old MES were. Looked like thin metal to me. There are a few reviews on YouTube on them.
One of the modders on the owners group on FB used a tube of high heat gasket maker, applied it to the lid and then stuck saran wrap on it and closed it. He ratchet strapped the lid closed and let it sit for a couple days. He then peeled off the plastic wrap and had a custom gasket. That said...
I have a MES with a mailbox mod and a Amazen Smoker in it. Recently have had some electrical issues with it (its 9 years old) and I upgraded to a GMG Daniel Boone. I've been though about 5 cooks with it and I get a lot more smoke flavor than my MES produced. I really like the size and...
Also, a little tip for chicken I just learned. Cover it in baking powder and let it sit over night. Should produce crispier skin. I have never really had crispy skin cooking chicken in the MES (cooking at 275). I normally toss it on the grill afterwards for a quick crisp up. I am testing...
I use Bilbos (http://www.smokingmeatforums.com/t/77564/billbos-world-famous-dry-rub-bbq-sauce-recipes) rub and then SoFLQer's finishing sauce. People rave about my butts. :)
I currently have an el cheapo old one now. The motor is pretty shot, barely will slice anything. I'm looking at a 12" Univex Boston slicer. Just wondering if there is anything I can look for before I agree to buy.
I'm going to look at some used meat slicers in the next couple days. I am wondering if there is anything I should be looking for that would call off the deal. Just want to make sure I don't throw down the money on a commercial slicer to get it home and have to put more money into it. Any help...
To be honest, I didn't even look around at any of the butchers yet. The way the people had their things labeled was off the wall. Everything was super pricey. I saw a 2lb pork belly for $8 and was like ok, I'll bite. Then she said that it was per pound price but a 2lb package. Oh, so $8 a...
I'm glad I saw this thread. I had just placed an order this weekend at a farmers market with a local farm for some belly. They were charging $8 a lb. I figured that was high and this thread confirmed it. Will be canceling that order.
