    wireless themo

I bought one of these off amazon for 55$. It is a great unit. The bluetooth range is amazing and the battery life is incredible. ANd the ability to see a "history" of the probe throughout the cook is nice

    Dyna-Glo wide body vertical smoker

I dont have the wide body, mines just the regular one but the only mod i've done to it in 3 years was to add some sheet metal as a deflector inside the cook chamber right above the firebox hole. Just enough to push the heat into the middle of the cook chamber. Other than that its been a great...

    Newbie smoking adventures

If it was still frozen, say in the middle, it makes it tough.  So far, knock on wood, I havent had an issue getting through the danger zone in the 4 hour time frame even with cuts as big as 13 pounds. Thats the only thing I thought of in rereading was that it may have been frozen inside yet, and...

    Newbie smoking adventures

Sounds like a good smoke. For future, be careful with meat that hasn't gotten to an IT of 140 within the safe 4 hour window. :grilling_smilie:

    Smoking crackers

Did several things like this a while back when there was still enough fuel left to provide some smoke but not get too hot.  I would toss whatever into a foil boat (open top) and let 'em go for a while.  Cheetos were pretty good, chickin in a biscuit crackers were pretty good, chex mix not so...

    controling temps. HELP

Here is the heat baffle I made.  It is an 8.5" by 5.5" piece of "weldable steel", not galvanized. It is screwed on with the two top bolts for the firebox.  This basically just deflects some of the heat downward and out farther into the cook chamber, which should even temps out a bit from side to...

    controling temps. HELP

I can take of a pic of the one I added this afternoon after work and post it.  Also, depending on when you bought the smoker the manufacturer changed baskets.  I will include a pic of that as mine is the current one which is, from what I saw in pics a vast improvement in ability to control temps...

    controling temps. HELP

One little thing for that smoker too...make a baffle off the firebox to push the heat out into the cook chamber a bit more and the temps even up dramatically across the racks.  THis thing is a very nice smoker for the price and by far the least amount of modifications I've ever had to do to get...

    Another party...

warning...pics ahead! Kinda like taking that last one with the bones as trophies of another beautiful smoke!  Changed up this go around and used half hickory half applewood.  Definitely doing that again.  Now off to cut and clean the peppers and test another beer.  See ya all tomorrow!
