I used the thermo from my turkey fryer to read my grill temps. I do plan on adding an upgraded thermo to it soon though.

I did just that. At 160*. I took apart the ECB and put one of the racks just above the charcoal so the skins would get a crisp to them. I will have to try mayo next time though. Thanks.
