Thanks for replying. This past year I have frozen first and then smoked and I thought the end product was pretty good. Just wondering if anyone has done the other way and had the end product turn out awesome.

So the annual whitefish netting season in MN is upon us. If my luck this year holds out, I will catch enough fish that I have to freeze some.
My question is: Is it better to freeze the fish first and then smoke or smoke them fresh and then freeze?
Thanks.

I'd love to get the Amazin' Smoker equip but I need to work up enough points. The WSM pretty much did me in for a while.
Thanks for the input everyone. I'll give it a shot one of these weekends and give a report back.

Thanks for the link. Have you gone to one of his classes?
My mom and stepdad live on Canal Park. I keep telling my stepdad to let me know when the steelhead are running, but alas, it's not working out.
Are you down on the river then?
I'll help you remember to put your app!
My uncle smokes a couple store-bought turkeys every year for the big family get together. They are awesome. I'm just wondering how they compare to the wild ones.
Not on Vermillion but just a couple lakes away. I've heard the area described as God's Country and couldn't agree more. One weekend a year just wouldn't be enough for me.
