    The Brisket/ECB Dilema

Brisket didn't turn out too bad at all. I think I should've trimmed more fat off, but it tasted great!

    The Brisket/ECB Dilema

@crockadale -- I'll do a search for that tutorial. I'd assume it's just making a cut but if someone actually wrote a tutorial on the subject maybe I don't know what I'm talking about. Thanks for the tips guys! I think to resolve this problem a larger smoker is in my near future :D

    The Brisket/ECB Dilema

This is my first time smoking a brisket (hurray!). I'll be starting the smoke tomorrow night (Saturday) to be ready for lunch while the Texans stomp all over the Jags (sorry, Jacksonville fans). When I bought my brisket tonight I knew I'd be running into a problem with finding a brisket small...

    Pulled Pork Taking a While....

Well I got impatient b/c we were going to the football game, haha... so I pulled the butt at 186 and stuffed it in the ice chest for an hour. I dont know if maybe my thermo was off or those extra 10-20 degrees just didn't matter, but that thing was delicious! I made the finishing sauce to go...

    Pulled Pork Taking a While....

Well the temp has started coming back up... it will come up to 183 and then dip down the 179 as soon as I walk past again, and then go back up to 183, lol. I've got a high school football game to be at in 2.5 hours, this crazy pig is killin' me! haha!

    Pulled Pork Taking a While....

Need a little advise guys, this is my first smoked butt. So picked up a 7.75lb pork butt last night and set it on my ECB around 2:20am this morning. It came up to 159 and plateaued, came back down to 152 and then up to 165 around an hour-and-a-half ago so I double wrapped it in foil and set it...

    NEWB! Hello from Houston!

OK... well no Q-View, sorry. Girlfriend has the camera and I forget to tell her to bring it. The ribs came out ok... I wasn't impressed with myself by any means. I left them in for 3 hours before wrapping in foil, spritzing with apple juice every hour. They stayed in foil for 2 hours... then...

    NEWB! Hello from Houston!

Thanks for the concern... No damage to my place but the area I live (Pearland) got hit pretty hard and clean-up has been slow. There are still downed power line poles laying across the streets and traffic is just being diverted around them... which is fine during the day, but on my way to work...

    NEWB! Hello from Houston!

Hello everyone! I've been perusing the site for a while now and thought it would be proper to introduce myself... I'm Wes, as my user name indicates. I'm from Houston and this Sunday I've decide to have a post-hurricane BBQ and smoke up some spare-ribs. This will be the FIRST time I've ever...
