    Have a question, smoked a deer leg last 4th and plan on doing one this year also. Leg is in brine right now, plan on wrapping it in bacon, just can't remember if I put the leg in a pan in the smoker or not. Anyone have any suggestions. Thanks!

    Thanks Earl! Most of the info on that link is for flipping the pan, my model doesn't have this. I was looking for info on the tuning plates or baffles.
