Talk to me about chuck roasts...

I'm about to do my first chuck roast.  I'd like to do an injection (just bought an injector).  I usually rub my meats the night before.  Would I do the injection the night before as well or do I do that right before I put it on the smoker?   Also...   how much time should I a lot for a 3 lb...

How does St. Louis style effect the 3-2-1 method?

Just curious... how does that prevent over cooking? It seems the cook time is the same.

How does St. Louis style effect the 3-2-1 method?

Hi all - I've done baby backs pretty close to 2-2-1. I've done full spares at 3-2-1. My wife brought home St. Louis style ribs. I haven't done those before. How should the lack of "tips" effect the "formula"? Thanks, Thomas

I've never done a fatty and want to try a breakfast.... Help.

Thanks all... what about eggs? Do you guys put eggs in with the pancakes? How much of this can be prepared the night before? Also, how long does a typical breakfast fatty take to cook (to 160)? How long do they need to rest (or do they)?

How long for a pork roast?

No worries. It's not a big deal to re-register. @kingudaroad - I'm not sure actually. It's not a shoulder, it's not a loin. Just a "pork roast" according to the package. ;)

How long for a pork roast?

Actually... I've been a member for a while, for some reason when I went to log in today, it didn't recognize my User ID. So, I had to recreate my ID. Same one as I had before. Did they move servers or do some sort of migration that would have caused me to lose my ID? I know on the weekends...
