    Cinder block pit help

Yeah, it’s where I actually got the idea originally. The whole hog is fun...but to me, it’s more of a novelty thing. I would much rather do the pieces, and mix up cuts and proteins.

    Cinder block pit help

good morning everyone! I hope everyone is keeping to together while on quarantine... I have cinderblock pit that I have used for chicken bbq’s and a couple of pig roasts. I want to do some butts/ribs..maybe some brisket, but have never tried. I’ve used an MES40 over the past couple of year...

    Pork belly burnt ends question

I knew someone would find a great link. Thanks civilsmoker! going to try doing this as part of the family Thanksgiving this weekend, but will not be near my smoker...hence the needing to do it in advance. Will update this with some pics of how it turns out!

    Pork belly burnt ends question

I was wondering if anyone has ever made pork belly burnt ends by smoking, on say Friday, and then finishing them on Sunday? Will they still turn out? Or will the texture not be right?

    First time whole hoggin’

Going to do skin on. I want to butterfly it on an open pit, so will have to flip if manually. Was thinking about the baste, but you would only do the inside cavity wouldn’t you? I also don’t know if it should be skin up or down while cooking...

    First time whole hoggin’

Greetings everyone. I wanted to pick some brains on doing a whole hog. I am going to be attempting one next month, and was hoping for any pointers, do’s/dont’s, rough times and temps for having this turn out delicious. I want to do a toughly 80lb pig butterflied on a cinderblock pit. I’m not a...

Fine tuning Mypin PID T-Series Question

Jckdanls07 has a good point about the probe. What type are you using, and do you know that IT is reading accurate?

Fine tuning Mypin PID T-Series Question

As someone that works with these types of controllers on a daily basis, I can tell you that the adjustments can be made. BUT...if you aren’t really careful, you can throw the whole thing out of wack pretty quick (experience). If you are holding at .3 degrees variance on a plywood box that...

    Building a MES questions

I'm a bit late to the party here ... but NHRA1877, I agree with the others that if you can get you hands on the larger unit, it's worth it. I actually recently built a custom PID for my MES 40. I wired it directly to the element, bypassing all of the stock digital controls. I did lose the use...

    Dang, Ny'ers

Welcome aboard nyc oz! That's a bummer on the skin, and one that I always fear doing a bird of any kind in mine. We were in fact going to smoke the turkeys this year as well, but went with the trash can approach, and they turned out GREAT!

    Dang, Ny'ers

Hope the weather is better for you guys down there than it has been for us this week. Ended up getting about 5” of rain between Sunday and Monday! The journal is a great idea, I actually started doing it after my first cheese run. And Lancer, the Canadian Bacon was a HUGE hit. I am on the...

    Pid wiring question

Stumbled across your post, and it doesn't show that anyone has responded. The schematic looks good. One thing that you may want to think about if you didn't do it, would be putting a fuse on either L1 or L2, just to protect your hardware in case of a surge or something like that. Hope that you...

    QUESTIONS for you MES30/40 users

I have an MES40, and also use an AMNPS. I drilled out the vent holes in the original chip tray, and haven't had a problem with the AMNPS going out. I do keep the top vent pretty well wide open as well. One other thing you might want to look into is an independent PID controller to replace the...

    MES40 Heat Sensor Malfunction?

Thanks for the update jcam. How labor intensive was it replacing the parts? And where are these pictures man...you can't tease like that.
