Well after some new smoker issues I ended up over cooking the stick. They are a tad dry but have great flavor. Got some jerky sticks now. I'd also recommend placing your smoker where you have light to see what's going on!!! Oh well lessons learned and they will be eaten.

Grupe you are correct but by only dropping one leg still leaves voltage potential is still in the heatnig element. To do things correctly and safely you should break both legs on a 240v circuit. This can be done with a 2 pole relay or SSR
