Brined Gulf Shrimp (chisoxjim style) w/ Q-View

Shrimp shells normally stick due to cooking a little too long. I am not saying your shrimp were overdone because they look perfect, but once shrimp is finished cooking they need to be cooled because the carry over heat will continue cooking the shrimp even after it is taken from the boiling...

    Temp to cook ribs

I try to keep my temps around 225-250. Like bassman said, I also use sugar in my rub so you don't want that to start to burn onto the meat. I finally tried the 3-2-1 method and was very impressed. Highly recommended.

    Brined 13-15 Monster Shrimp w/q-view

ChiSoxJim, if you can get your hands on Bon Secour brand shrimp you will not be let down. They are by far the best I have ever worked with and especially cooked. I have worked in the seafood business for six years now and they are by far the best. http://www.bonsecourfisheries.com/

    Greatest Smoke Ever

Does any one have that one smoke that is more memorable than any they have ever done? One that, while it was happening, you never envisioned it turning out the way it did? Like laying out the perfect rack of ribs or cooking a brisket to absolute perfection? Pork butt so tender it literally...

Foiling Ribs - Have you ever added...

BuffaloSmoke - You should maple glaze the ribs and drink the bourbon ha ha I use maple syrup in the sauce that I make for ribs and use honey to lightly coat the ribs when applying the rub instead of mustard. To each his own, but that is how I do it. I always go for a sweet taste with ribs. I...

Onedragon, I am in Delaware County PA and we are expecting a foot and a half or so they say. South Jersey is supposed to get SLAMMED. I say those butts look darn good to get on today and that bottle of Jose Cuervo and that delicious Yuengling should keep you warm during the blizzard ha ha

    Pitmasters

That is funny. Especially when half the show is Myron running his mouth about how he is so far ahead of the bunch and then they call out the top five and he always seems to have a reason why he was not apart of them.....normally it is "poor judges"

    Pitmasters

I have not been on here in a long time, but look forward to being back more often. I just watched the first two episodes of the TLC show "BBQ Pitmasters" and was wondering how true these competitions are to what they present on the show? I always envisioned these events as a fun gathering to...

    My Rib Experiment

Cool, thanks Rich. I assumed as much. I have never foiled yet and been really wanting to try this method. I am really liking 2-2.5-1 for spares.
