    Water In The Pan

I always use water in the pan (or some other wet juices etc).  That helps to keep the internal temps of the smoker more even during cycles or if you open the door.  It also adds moisture to the inside of the smoker (some debate though if it goes into the food) so should help the outside of the...

Do you need to soak the chips prior to using in an electric smoker?

There's really no need to soak chips for use in a MES.  Just put in less chips, more often than you would if soaked, and you'll get a nice gentle smoke that's stays consistently smoking for great results.

    New Charcoal chimney

More Alton tips... I've always started mine with a piece of newspaper or 2 wadded up and about half the time it would go out before it got the chimney started.  This weekend I used 2 paper towels and sprayed them lightly with olive oil (it's what's in the sprayer) and you could tell right from...

Smoking Corn on the Cob Advice

This isn't smoking, but I just started trying it after someone told me to and it seems to work.  Throw in 1 or 2 ears in the microwave with the husks still on and nuke 1 for 3.5-4 minutes and 2 for 6 minutes.  Everything just peels right off silk and all and comes out quick and good.  If the...

Do you trim spares St Louis Style or Smoke regularly Poll

I "grew up" eating Dreamland Ribs in Tuscaloosa and they did them whole and since there's no better bought ribs in the world , that's how I have always done mine too.  I live in Texas now and still haven't found any retail ones that are better, and since I'm in Texas where everything is bigger...

    My full MES

Looks great!  I'm surprised you had any ribs left after waiting for the rest of the stuff to finish.  It would have been rib-nap, rib-nap etc and then where's-the-ribs?-nap.

    new pitmasters host

Here I have this nice set of ribs in the fridge but thought I had to wait until Sunday before I could eat them because of my schedule.  Now that I know they're just as good done in 40 minutes (and just as smokey if I boil them in beer?!?) I'll be eating ribs before I leave today.

Any welders out there? I want to get a welder but am a rookie, Help!!

I've got a Hobart Handler MIG 180.  For my uses it's perfect.  It can go low enough to do thin metals that require little heat, but high enough to weld 1/4" steel in most conditions, and thicker steel in better conditions and more passes. If you're new, the MIG welder is very easy to learn...

Anyone experienced with the GOSM Charcoal?

I don't have one but I'll help you bump it back up.  In the meantime until someone comes by that can help you, try doing a search with GOSM. It brings up a bunch of threads and maybe one of them can give you some tips too.

Of course now that I posted this, it's (it is) working again.  Oh well...must have been a glitch I guess.

    Mark Forums Read

This doesn't work for me ("Mark Forums Read" and using IE8).  I click on it and nothing happens.  Also, when I leave for the day/night and come back, my New Posts haven't reset to only new ones, same as if I clicked Mark Forums Read option would have done if working. It didn't work for me at...

MES Electric Smoker Cooking Too Fast???

Absolutely check the temperature in the MES vs. what the setting is.  Mine set at 205 gives me between 218 and 229 on average so I use that setting for when I want 225.  At 225 I get an actual temp of 237 to 249.  These temps are for winter and summer, windy and not, so your mileage may vary...
