    Is it possible to overcook a brisket?

    I think what I'll do is cook it as usual and tomorrow I will reheat it in the oven w/beef broth to the 185/190 mark. Hopefully that will work.

    I'm smoking two 7lb briskets for a get together tomorrow.  If I throw them, whole, in a pan with some beef broth and then foil, in the oven will they come out dry?

    The plan to put it in a cooler for a couple of hours. I have never gone as long as 7 hours before. I may have to give it a go!

    Thanks all! The pork is coming along a little quicker than I thought. In 5 hours it's gone up 100 degrees. I was hoping to be done about 4pm, but it might be an early supper. --Smoke

    Here is one of our girl, Abby, a Chocolate Lab. In this picture, she is 5 months & 45 lbs. I think she will top out at 80. We'll see. Also, I can't keep my son away long enough to get a picture of her by herself, but that's a good thing!
