Still had half a wild hog in the freezer so we smoked it in my UDS for a Christmas Party with friends.Cut it up and rubbed the night before.Got the barrel going with Kingsford Comp.coals and Hickory chunks,put the meat in it took about a hour to get it to settle in at 237 degrees and it cruised...
Thanks eveyone for your comments,makes sense now why there will be no flare ups and the extra flavor value,that is why I have always liked grilling over coals.

I have almost every thing I need to start my first UDS build,after many hours of research I have a question that I have not seen any info on.It would seem that smoking fatty meats would cause flare ups because it will be dripping directly into the fire box.is this a real concern? Or do you use...
This is the last of my 2010 garden.Pulled up all my pepper plants and got them canned,just mixed them all together in the jars.

Yes I have been canning every thing this year,
Rotel,Juice,Pepper Relish,Raw Tomatoes,Salsa,Sauce and Stewed Tomatoes.
Also have canned Green Beans,Carrots,Corn,Potato's,and a variety of Pickles this summer.
