    Smoked Wild Hog...With Q-View

    Still had half a wild hog in the freezer so we smoked it in my UDS for a Christmas Party with friends.Cut it up and rubbed the night before.Got the barrel going with Kingsford Comp.coals and Hickory chunks,put the meat in it took about a hour to get it to settle in at 237 degrees and it cruised...

    UDS Cooking Question

    Thanks eveyone for your comments,makes sense now why there will be no flare ups and the extra flavor value,that is why I have always liked grilling over coals. Going to get started on my build this week and get to another level of smoking!!!!

    I have almost every thing I need to start my first UDS build,after many hours of research I have a question that I have not seen any info on.It would seem that smoking fatty meats would cause flare ups because it will be dripping directly into the fire box.is this a real concern?     My 2010 Gardens

    This is the last of my 2010 garden.Pulled up all my pepper plants and got them canned,just mixed them all together in the jars. Thanks for looking at my garden adventure for this year.Time to enjoy all the fruits of my labor and get prepared for the 2011 garden. Red and Green Bell...

    My 2010 Gardens

    Thanks Squirrel, Yes I have been canning every thing this year, Rotel,Juice,Pepper Relish,Raw Tomatoes,Salsa,Sauce and Stewed Tomatoes. Also have canned Green Beans,Carrots,Corn,Potato's,and a variety of Pickles this summer.
