No sear for Me...rubbed mine down with favorite rub..in the fridge overnight, on the smoker reached 150 F, foiled it.. till it reached 205 F. set in cooler for one hour..unwrapped and it fell apart..nice and juicy..no pics so I guess it never happened.

my new GOSM (Landman)big block also has the removable drip pan..Very large and heavy cast Smoker box. I have owned all three sizes..and this one is the Best so far.
I have bought all 3 sizes of this smoker..started with the small and now with the Big.
Using the old addage..ShouldaWoodaCouda..spend the xtra Bucks and Buy the BigBlock...its almost well made.
a full rack of BB will fit. but they will lay up to the sides..I just got the Big Block for this reason..and the Big Block seems to be a little better made.
How about this..Japs..stuffed with cherry pie filling and crushed pineapple ..wapped in bacon. or covered with biscuit dough and baked on a pizza stone.
