    Tamales!

I'd have never believed it if I hadn't seen it myself! I was looking in the freezer for something interesting try out my new Brinkmann Upright and came across a whole vacuum sealed bag of uncooked venison tamales from last year's hunting season. Well, knowing that tamales will keep until...

    smoked catfish

It probably had to do with the density of the catfish. Its a very dense fish and should yield better results with fillet strips. Tried some like this at a get together and it was great.

instead of a container for brining....

I can help with that. The bags used for regular, off-the-shelf, trash bags are made with the same quality standards as ziplock or other food storage bags. Your larger, busier, restaurants use them for marinates all the time. So, don't be afraid to use them to marinate, brine, or any other meat...

Love your sig-line. I've tried venison from a friend in TN and it is the best day a venison shoulder ever had, good luck with the hunt.

    Brinkmann Cook N' Carry??

Yeah, it get really hot, about worthless for smoking but makes pretty good grilled chicken breasts. Think I'll keep the little cuss for a grill. I just ordered the one from Walmart.

    Peach wood?

As a newby to outdoor smoking you'd not expect to hear much from me on this, huh? Well, here goes. I've used pear, peach, apple, mesquite, hickory, and mulberry for smoking pans in the kitchen. ( This was a commercial kitchen with professional exhaust fans, don't try it at home without them)...

    Brinkmann Cook N' Carry??

It has no holes at all, the lid even has hasps to lock it on. I think I'll put it back for cold smoking one day and buy this one. http://www.walmart.com/catalog/produ...uct_id=3342509 I've not seen it mentioned but it actually looks like a smoker, at least. I don't think it would be a good idea...

    Brinkmann Cook N' Carry??

I got my smoker in from mail order yesterday and to my surprise its NOT an ECB but a Brinkmann Cook N' Carry. This thing looks like an ECB that has been sawed off in the middle. There is no thermometer or door for access to water and charcoal, only a single grill, as you would expect from the...

Howdy from the wilds of South Arkansas

I'm from south central LA, the land of tall pines and pink tomatoes, born and reared in Warren. I first got interested in cooking by coming in third in a chili cook off in Camden when I was eight, way back when dinosaurs roamed on the Ouachita River. I wound up working for Uncle Sam in far away...

Howdy from the wilds of South Arkansas

Just call me Rowane, been known by that since I was 5 (a contraction of Roy and Wayne all good southern guys need both names) I'm a classically trained chef who is bored with retirement and beginning smoker. I got my training at the Cordon Bleu Institute of Chicago in the early eighties after...
