    Brisket Newsletter

I'm looking for Jeff's Newsletter from last year that described doing a brisket in a foil pan when it hits around 160.  As I remember you add liquid and cover with foil to finish the cook.  Any help would be appreciated. Thanks!

Big Green Egg - Chips vs Chunks

I'm considering purchasing a BGE.  I've smoked for years using offset indirect smokers and have always used wood chunks.  I've noticed in most BGE user info, including Jeff's here, that chips are used with and without a firebox.  Do chips provide enough smoke for a good smoky flavored 8...

    Cooking a wild hog--Help

Baste if often.  Wild hogs have very little fat on them compared to domestic pork.

    Pork loin question

I did one last weekend.  I took it off at IT of 155.  It went all the way to 163 while resting.  I like my pork nice and juicy and while this one was very good, next time I'll take it off at 150.

First Time ABTs - Will not be be the last

I always remove the seeds and I control the heat in my jalapenos by the amount of the ribs I remove.  For those of us that like them spicey hot, I leave some ribs and for those who don't, I totally remove them.  I also use cayenne in the cheese mixture to add a little kick.

    Big sale on ribs!

CNBC had a segment on Wal-Mart in China awhile back.  In it they said most Wal-Mart shoppers in the U.S. shop there 2-3 times per week.  In China their average customer shops 2 times a day and a typical supercenter will serve about 120,000 customers daily. They also showed the popularity of...

    Stupid stacking ?

My fire basket is 16" X 16".  I place a 2# coffee can upside down in the front left corner and then pour my lump charcoal in to fill the basket.  I put a few chunks on top of the lump.  When my chimney-lit charcoal is ready, I remove the coffee can and dump the lit coals into the space left by...

    First time Beef Back Ribs

Many years ago while on a hunting/camping trip we kiled a deer in the morning.  When we dressed it we noticed how nice the ribs looked.  We had a 55 gal drum we had cut and converted f orour grill so we put the ribs on and slow cooked them all day long anticipating a great meal that evening...

    Cuban Sandwiches

When we lived in Tampa everyone raved about the Tropicana's cubans, but we always preferred the Silver Ring.  Not only were their cubans great, but the stuffed potatoes and crab cakes were to die for.  I miss it just sitting here typing this.

    Flat Grilled Chicken

I follow your process through removing the backbone.  I put my two whole chicken halves skin side down on the grill for direct cooking (medium hot coals/gass) and then place a foil wrapped brick on each.  There'll be lot's of smoke but don't worry that skin's getting very crispy.  Flip them over...

    Reheating Question.

I recently smoked two butts on a Friday and served them Monday night.  After all the normal smoking, resting, pulling stuff, I put the pork in large ziploc bags, squeezed all the air out, and refrigerated them.  On Monday afternoon I took the bags out and let them sit for a couple of hours.  I...

    Best practice for reheating brisket?

If you're looking for quick and easy, put your slices in a one gallon zip loc(s), pour a little beef broth in the bag (doesn't take much), shake it up, and microwave it on a low setting.  I use defrost for a couple of minutes.  Be sure and leave a slight opening in the bag for the steam, and...

Slight Chargriller Mod will this work?

Here in Knoxville, Lowes sells the CG SFB for $69 and Kroger sells it for $59. Tractor Supply sells the CG Duo with SFB included for $299!  I don't know if they sell the SFB separately.
