Nice! If there's an external scratch, use wood stove paint and a fine brush to fill the scratch. You could do the same inside, but as you said, season either way. Rich

Yeah, I'm considering an older model also, Jim. The important things to me on the new ones were actually the water pan (which as you said can be replaced) but especially the larger door. To me, that door seems like a better "backup plan" if needed. The thermo, I can do without or work around...

OH! Now THAT's especially helpful. I always used briquettes before and know how much ash they produce. Based on what I've learned recently, I was planning to try lump when I can.

Welcome, Joe. I be a newbie too and live not too far away east of Pittsboro (love too, but that was a typo). I'm also looking into a "real" smoker after grilling on propane for about 7 years (cheap charcoal grills before that for 100s of years ). So maybe we can learn something about all this...
