    First Brisket Attempt

    Hi all I am going to try my first brisket this coming Sunday for a football party.  I was looking and couldnt find a tutorial.  Can someone point me in the right direction so my Sunday is a success?  Thanks for any help.

    Hey thanks againk.  Gonna have tons of other food as well.  The brisket will be for the 4pm game.  Got a couple of fatties lined up and other good non-fat food to inhale, plus a full keg in the kegerator.

    best beer for BBQ

    I love trying all different micro brews so I vary alot as far as what I drink when cooking.  Ive been drinking alot of beer from Dogfish Head Brewery which I have tried about 6 or 7 varieties and all have been awesome.  This time of yr Sam Adams makes Noble Pils which is one of my favs.

    Fatties For Football Sunday

    sorry all no pics  as of now but I did my first fatties today.  One pizza themed (pepperoni, sauce,mozzerlla) and another stuffed with eggs, hash browns, cheese, and crumbled bacon.  They turned out unbelievable  and everyone loved them.  They were by far some off the best things I ever smoked...

    put it in the cooler around 1015 am eastern.  when i was taking it out of the smokiner it felt very soft.  is this how it normally feels when done right?  also do u think I should leave it in the cooler til later this afternoon or will it get mushy that is my biggest worry?

    total time was about 10 hrs.  it was bare for about 5 hrs then foiled at 165.  was in foil til this morning when i woke up.it was smoking btw 230 and 238 the entire time.it only took maybe 2 or 3 hrs to hit 140.  i never had the plateau effect i keep hearing about.

    Hi all I put a pork shoulder in last night at at midnight.  My thermo never alerted me to when it hit 200 and when I woke up it was at 212.  I think it may have been at this temp for 2 hrs or so.  Is it going to be ruined due to this?  Also we arent eating til 5 pm.  Should I leave it in the...
