did my first non slow and low cook and no water bowl, the other day on the WSM! A rindless pork loin cooked in 2 hours, came out great!
Now if I was to cook a boneless pork leg roast, for 2 to 3 hours in the wsm, will the skin rind crackle? Or am I better to use the weber kettle? thanks
had the wsm for around 10 weeks now! I love it! So much different then any other bbq I have ever had! I love the setting up, and the smell of the charcoal and wood chunks filling the back yard with smoke, the problem is I may have cooked too many meats in that 10 weeks, Pulled pork, beef ribs...
was my first time with mustard on lamb! the crust was a bit too hard, and a little too spicy (to much chili) think I might of over shot the mark by 2 hours!

Hi, I normally cook pork belly in the weber kettle, so it crackles! & yesterday did a 12 hour pulled Lamb in the WSM, so I will be using the wsm today to cook the pork belly, some wings and 1kg of beef ribs cut into cubes! (as I don't have to clean the wsm and the kettle on Monday)
