just pulled them at 178f and letting them cool to room
temp ,then vacume seal in two's for latter - platecutter
Just put 8 Polish and 8 Brats in the smoker, this is my first
time smoking pork ,I have my meat temp alarm set at 175f is this to
hot ? and went they get up to temp what next I've heard soak in beer
and put in fridge would that be alright ?

Hi all Dean from SoCal just getting started bought a Chargriller Pro started the mod's ,side firebox , chimney extension to the grill, still working on sealing. Found this site a few weeks ago, very nice and lots of good information. Looking forward to reading an seeing more. Thanks Dean
