I smoked 4 butts totaling 30 lbs last weekend for 27 people. I didn't get a chance to post a Q-view because my camera was dead. I got about a 60% yield and had 4.5 lbs left that I vacuumed sealed for the freezer. It will depend on the side items you serve. Leftovers are always good.
How many pounds of raw pork butt do I need to smoke for 25 adults. All of them are pretty "healthy" eaters... I'll be serving pulled pork sandwiches, Dutch's beans, potato salad, and coleslaw.
Just a short Q-view of a small rib smoke this weekend. St. Louis style rubbed with an eastern carolina rub wrapped for 6 hours, then sprinkled with dark brown sugar. Used the 3-2-1 method while spritzing with Caption Morgans and apple juice. No sauce on the ribs. As always, Dutch's "wicked"...
I was just cooking for my wife and I. I did 20 legs so it made it worth my while to fire up the smoker. We both take left over to work for lunch, and my daughter will be over this evening for the balance of the leftovers.
Yep, they were tasty. They were spicy but not overtly hot. Good blend of heat mixed with flavor. Not quite enough heat to make your sinuses drip, but you know it's there begging for a cold beer.
Haven't posted it yet. I'll do that this evening. The Lowes in my area was closing the leg holders out for $2.49, so I bought 4 of them. I had not used them before, but they work pretty well.
