It has been a while since I have posted. Wanted to see if I can get some help or advice on smoking a Flat as I have only smoked a whole packer with the point.
Do I need to handle the flat differently to keep from drying out?

Thank you everyone! I did use the MES to smoke ribs yesterday with the high temp for the day 34 degrees. It did seem that is was reading lower just like redhealerdog had mentioned.

Does anyone know what the maximum low temperature outdoors would be for the MES30? I want to know at what outdoor temp will the MES30 stop holding internal temp.
I just used the stubbs over the weekend. I did a pork butt using them. The flavor was good but for the first time I kept getting flare up using my MES. They seem a lot smaller than some of the others I was using so I am not sure if that has something to do with it. Let me know how you make out.
