    Cold smokehouse wood advice....

Yeah I have had thoughts of buyin some cedar slabs for it, but im planning to build this with just raw logs with bark removed, like a log cabin, and seal it with straw and mud. I also have a ton of pine trees the correct size, might use them instead.

    Cold smokehouse wood advice....

I am planning to build a small smokehouse, using logs from my property, I have post oaks and cedars that are both plentiful and of the size I want. My question is will non treated barkless cedar cause any issues if i use them, honestly dont want to go cuttin my oaks

Wet vs Dry and Hot vs Cold

In tinkering with a jerky recipe a few years ago I came across a particular whiskey that added a very  nice flavor that I think would be awesome in bacon, but if it hinders or screws up the curing process I guess that maybe out.

Wet vs Dry and Hot vs Cold

Ive been leaning towards dry and cold, if I use a bourbon for flavor during the curing process, will the alcohol effect the curing process?

Ive read thread after thread ( here and elsewhere) articles upon articles, and a ton of youtube videos. Leaving me with a few questions. #1 -...

    venison sausage Final open shot

I guess there is a possiblity that NC allows rimfire deer hunting, but most states require centerfire ammunition only, regardless, the sausage came out looking awesome, what kinda seasonings do you use?

    venison sausage Final open shot

.17 HMR is actually smaller than a pellet or bb, pellets are .177, dont think I would advertise the method of death in this case, fairly certain this was illegal. Sausage looks great tho

Guess this is an appropriate place to say this as any,  Congradulations OSU Buckeyes, played a good game and deserved the win.  My hogs just never got it together in time to bring it around, and when we were given a golden oppurtunity, one of the strongest arms in college football failed to get...
