Wood from a fallen pear tree

Has anyone used pear wood for smoking?  A storm came through last night and it looks like I will have some to try out.

    Smoking duck and Turkey gravy

Thanks for your help guys, I got the duck today along with 2 12 # turkeys and a pork butt.  I am going to pick up some Salmon later in the week.  Should make an interesting smoke.  I think it will be morning to night. If the duck goes well, its Q view time. Of course the duck and turkey are for...

    Smoking duck and Turkey gravy

Domestic duck is what I am using, I agree that wild duck can be a challenge. My mother use to make wild duck that was great, she soaked it in cinnamon water and then baked it. It was great.  She is gone now so I can't ask just how she did it, I just remember it was good.  I just wondered if...

    Smoking duck and Turkey gravy

I started smoking turkey a couple of years ago and now nobody wants regular baked, I can't blame them.  My question is has anyone smoked a duck, I would assume you would put it straight on the grill and not in a pan.  What temperature do you go to? How about gravy for the turkey, do you do one...

Here are some equipment pictures several of you requested; Heat baffle that evens out the heat across the unit. Seems to work well Notice the propane lighter for starting. Works really well

    Wood

I just got access to a lot of wild cherry wood. I have never used cherry, is it a good smoking wood? Is it better for one meat or another? Thanks

    New smoker

After much help from you all an looking everywhere I have purchased a new smoker. Not a real big one but it really looks good. It is manufactured and sold by Horizon smokers in Oklahoma. I was in Kansas City a couple of weeks ago and looked at them. I sent the company an e mail and dealt...

    Brinkmann Cimarron

Got a lot of help, thanks, but sometimes just adds to the confusion. Sounds like it is over priced for the size. I am going to check with a few bass pros for what they have in stock before going any farther. I am close to Indy so there must be a good smoke shop un there some where. I had a...

    Brinkmann Cimarron

Not sure if you ever have enough space, I hate to fire up the smoke without a lot of meat in it. The old unit I had was about this size but had extra racks I could slide in from the end if needed. You have a better idea for this money? Toasty
