    After posting this awhile back I also did the boiling water test.  the MES probe was within 1 degree of my ET-7 probes.  When there in the smoker they are within a couple degrees of one another.

    I know when I used my gas grill for smoking, I would wrap chips/chunks of wood in aluminum foil and poke a few holes in the top to give me just enoough smoke without them catching fire.  Maybe something like that would work for you.  Then just replace the foil pack with a new one when its done...

    Beef from a Dairy

    Grass fed beef will sometimes have a grassy smell to it.  Seems to be worse the older a cow or steer gets.  However, I have had the best tasting meat ever from a 3 year old milk cow.  Mike

    What is up with the MBS 40? Getting hard to find.

    When I bought mine in August, they only had 2 left at the Sam's by me.  I was told they were a seasonal item, and they were clearing them out at $242.00.  Hopefully they will restock again in spring.  But it seems all the good products there get discontinued after a while for some reason.

    I haven't been here long, but have read alot of Ron's posts.  He was a super guy and very knowledgeable.  I learned alot from his posts.  He will be missed.  My condolences to his family.

    Thanks for the info.  I ordered the maverick ET-73.  This should solve any temp questions.

    How accurate is the built in MES meat probe?

    Just bought a new 40" MES and was wondering how accurate the meat probe is inside it?  I see every  using a seperate unit like the maverick or taylor units.  Just wondering if its worth using or not.  Maybe I'll find out when I get my Maverick unit.  Thanks!!

    Hello from Wisconsin...

    I've been reading here for over a year, and finally picked up a MES 40" at Sam's Club yesterday.  Got a great season end deal there for $242.01, and can't wait to get started.  Hope to fire it up this weekend!!  Mike
