    I am in a similar situation. I have a 23lb bird I am going to do this year. I have an MES30. I have been fretting about the best way to do it. With some help from the other members here I have come up with a plan. I plan on Spatchcocking the bird (cutting in half completely if it wont fit...)...

    I do a fattie day at work about once a quarter and try to make 3-4 new ones every time. The most recent ones made were for thanksgiving. used 50/50 turkey  sausage and pork sausage.
