    Yes, it's another butt w/q-view

Very good looking. The slaw looks awesome too. Is the recipe for the slaw around here or is it secret? :-)

    Disappointing Ribs

I decided to take everyones advice and I tried them this morning. They definitely taste better than yesterday so that is good. I still noticed that they didn't have as much flavor as the butts or the baby backs. The next smoke will probably be back to the butts to bring back the good stuff...

    First time smoking a Butt

Good luck and enjoy. Can't wait to see the finished product. What are you going to rub it with?

    Disappointing Ribs

They actually looked pretty good from the top. These were from a high quality butcher not a grocery store so I figured they would be a good cut. I had to cut the rack in half though for my ECB and when I did that, I noticed that they seemed really fatty from the side view. I would say it...

    Disappointing Ribs

Fellow smokers, I decided to do some ribs today and since spare ribs were on sale at the butcher, I picked up two racks to do. I have always done baby backs before so this was my first try with spare ribs. I trimmed them up as St. Louis ribs, rubbed them the day before, brought them to room...

    First Spare Ribs

Nice job as it all looks real good and you are making me super hungry. I'm actually going to be doing spareribs for the first time tomorrow as well. Did you use the 2-2-1 method? Also how long did you end up doing the trimmings?

    The Butcher has decided.

Good luck, I'm sure they'll be good. I paid $1.99 last month as well. It was $1.79 in April. Let's hope the trend doesn't continue. Also, I picked up two of them. One had a nice fat cap and the other looked pretty clean without the cap. The one without the big cap was much fattier inside...

    Hello from NJ

A neighbor was going to get rid of his so I got the other grill for free. I figured I would give it a shot as it has better venting than the mini kettle. I think it would basically replicate the bottom of the weber smokey mountain if it works. I picked up an expanded sheet also but haven't...

    Pulled pork pictures

Thanks for the comments and I just posted in the roll call. Yes, the pork came out awesome. The finishing sauce really makes it though. First time I did it, I did half with and half without the sauce. Once everyone tasted both, it was decided to put the sauce on both.

    Hello from NJ

Hi all, I'm Marc from northern NJ. I've been reading this site for a while but just made my first contribution post. I'm pretty much a beginner smoker but have been learning pretty fast. I purchased my ECB smoker about 6 years ago and it basically just sat around for about 4 years. When I...

    Pulled pork pictures

Here are some pictures from my pulled pork smoke for the 4th. This was my 2nd time doing the pulled pork. I used the tips from the basic pulled pork sticky and SoFlaQuer's finishing sauce recipe. I did two butts in the smoker this time which made it a little harder to keep the temp up. I...

    Basic Pulled Pork Smoke

Thanks for the info in the sticky. I used it this friday for an 8lb butt on a slightly modified ECB. I use one of those $20 weber kettles as the firebox under the smoker rather than the suffocating charcoal pan that is included with the smoker. Started at 5:30AM, pulled it off at 4:30 at...
