    Grill to smoker conversion

I converted my Char-Griller side firebox smoker to pellets last year. I bought the burner/control assembly from Smoke Daddy (www.smokedaddyinc.com) and I couldn't be more pleased. Fill the hopper, set the temp, when it hits the temp put the meat on and check the meat temp probe for the internal...

    The best all beef hot-dog

Koegels by a landslide at my house... We prefer the Viennas but the Polish Sausages are pretty darn good too. Nathans beef = OK but nothing to write home about I don't think. Those of you (most of you) that can't get Koegels... I feel sorry for you...

    First try at Pastrami...

Well, I forgot the finished pictures... I was being hounded by the family... and then... it was pretty awful. I had soaked the corned beef brisket in water for probably 6 hours or so to try to get out some of the salt. It tasted like maybe 12 more would have been about right. Wow was it salty...

    First try at Pastrami...

OK, so I cooked until 170, wrapped and now waiting for it to climb up to 190 or so. My only questions (only?? haha) are about heat management, or maybe lack of fire management... I have a CGSP, and I can get to 250 at the grill top pretty easily. But it seems like after 3.5 or 4 hours, it drops...

    First try at Pastrami...

This is only the second time I've used my new smoker, the first was a chicken that came out awesome... wife and daughter thought it was "the best chicken I've ever had". Needless to say the new smoker is a hit. Today I just dropped on a corned beef brisket to take a shot at pastrami. I used my...

    Goat QView

Goat looks awesome... I had goat (cabrito) on my last trip to Mexico for work. It was slow roasted over an open charcoal fire, and tasted awesome. I'd love to do one here at home, but I'm not so sure I could even get the butcher to order one for me.

How did you come up with your screen name?

I've used my screen name all over the internet for years and years. It goes all the way back to the Dow Jones News Service, back before it became Compuserve. It comes from the names for the characters of digital communications. The mark being the '1' and the space being the '0'. It seems to work...

    Help! Trying to assemble Char-Griller!

I finished putting together my CGSP yesterday, and if I hadn't read about how hard getting that football out was I'd have probably destroyed mine. Instead, since I figured it was going to be difficult, I broke out the air chisel. It's been in this cheapo air tool kit my wife and daughters bought...
