Quick question for those of you smoker builders. I picked up a defunked commercial refrigerator and started to inspect it and found it to be lined with plywood instead of insulation? Do I need to remove the plywood and replace with high temp insulation? Any insight would be great.
Does anyone if a "Red Splendor" flowering crab would be a good tree for smoking. It is best known for its spring blossoming and then has tiny apples which the birds love come spring time. Any help would be great.

Last year I bet I did close to a 1000lb of various smoked meats and I am amazed how much i have learned on these forums and how helpful everyone has been with suggestions. Just wish I had more time to devote to bbq.
