    There really is not a specific amount. But I have found its better to spray a lot on then pour it directly on the ribs. I use to pour it on and found my rub was washing off where I was pouring the AJ.

    When to inject your butt

    I do it the night before if I am starting the smoke that morning, but if I do an overnight smoke I inject first thing in the morning. I think you will be happy with the Sam's Club butts, I have used them for about 3 years now and have had no complaints about them.

    KC style is my fav, mostly because I grew up there. Really could use a good Que place in Chicago. Anyone traveling up to KC on I35 needs to stop at Oklahoma Joe's worth every penny.

    Lots of Buffalo

    My friend recently shot a buffalo and is giving me some of the meat. A long with steaks and ground bison, he has some roasts (avg 6-7lbs). Any tips on how we could smoke these bad boys. Temps? Foil/No foil? Mopping suggestions? Thanks

    Wood around Chicago

    ok, we have a bass pro shop and I have bought the wood there. I was just seeing if anyone has bought from places that sell fire wood, i.e. A&M Wood, and have had success. Thanks for the help

    Wood around Chicago

    Need some ideas on where to find wood for smoking in the Chicago area. I am out near Aurora. Anyone know of a place or ideas, much appreciation. We cut down some trees on the golf course this winter but that won't be ready for awhile.

    Suggestions, observations or hints needed.

    Sounds like it should turn out really well. I have only done two briskets myself. The second one i splashed the meat with a lot of the spritz i used and wrapped tight in foil. Then let it set for 30-45 minutes, i thought it made the brisket much more tender and juicy.

    First I have to say how much I love this website, and I only hope to give back as much as it has given me. Originally from KC (Home of BBQ!!). Work brought me up the chicago area. Looking forward to doing my first Q-view this weekend. Gonna give brisket a shot for the first time.
