I'm sort of having the same problem. At the lowest setting I can get about 220 for the first 3-4 hours, after that I can't keep the temp below 275. I use a digital thermometer and set it to beep at 250. I have to open the door just a little bit and let it cool.

I just finished the first ribs that I ever made on a smoker and they were awesome !!! I used the 3-2-1 method, Jeff's rub and the sauce on the side. I can't believe they turned out this good on my first try, beginner's luck I guess LOL !!!

I've had the same problem before and on two different grills. The first grill was a Weber and the answer to the problem was in the owner's manual. It seems I caused this to happen when I changed the tank and left the grill's vavle open, then opened the vavle on the tank. DOH !!!
