challenges with Brinkmann Square vertical smoker

My smoke last thursday went perfect, although took some tending too. What i did was get a good amount of coals going good then took enough off too get it down to temp and put the 'extras' in a another small grill with cover to sit, and if the temp started to drop I would take coals off the small...

    New from Topeka, KS

I'm new to smoking. I got an vertical brinkmann box smoker and learned a lot right away. I had trouble getting a temp right away and did some research only to find out it was a design flaw. I did what was suggested and got a wok for the coal pan, however that gave me huge spikes in temp. I...

challenges with Brinkmann Square vertical smoker

If you come up with anything that works well let me know cause i'm getting very frustrated at keeping...

    Keep smoking?

didn't use foil but reading around sounds like maybe i should try that. i will not check the temp and do what is suggested. so in follow-up once it has reached the appropriate doneness it should be removed correct? leaving it on longer will not make it more tender?

    Keep smoking?

I'm pretty new to smoking and have a question. I have a vertical water smoker and use a mix of lump charcoal and wood chunks. Last weekend I monitored my temp very closely and it was at about 230-240 the whole time, however my ribs reached internal done temp well before most people say it should...
