    Riben Sandwich!

    I was looking for pickles for a rib sandwich and ran across a jar of saurkraut. I grabbed the 1000 island dressing and voila! The riben. Man it was great, course I was hungry.

    a fishy problem

    grilled catfish is great. make it spicey. Grilled I stick with tuna, shark, striper or salmon. Tuna is #1 in my book. very steak like. I'm in the deep south and have a pretty strong cajun background so, well you know, suck the heads and eat the tails. smoked crawfish rock!!!!

    Since my MES hasn't been coming up to temp I decided to call Masterbuilt. They got me to check the controller first, comparing to an oven thermometer. It was accurate.     I was concerned with the slow heat up at first. I bought mine mid january, the 40. When I did the initial cure it took 3 hrs to get to 225. Todays example - I started at 1 and 6 hrs later it's at 200. All this considered, everything I have cooked on it has been great. I am going to look into...
