    MES Electric Smoker Cooking Too Fast???

    I have noticed with mine that the upper part of the interior is hotter than the lowest rack.  I did 10lbs of pork shoulder last weekend for the 4th and on the lowest rack.  It took about 8 hours of smoking and another 2 wrapped in foil to be done.  I would have cooked quicker on the higher racks...

    New MES 30" Owner - Maintinance Question

    I have yet to clean the inside of mine.  I just clean the removeable items IE racks, drip pans ect.  The maintance book says to only wipe out the inside, no soap,  as the stuff builds up inside, you get more flavor IMO

    Masterbuilt smoker vent position?

    You want to leave your vent open 50% to all the way.  I have tried smoking with the vent closed and you dont get much smoke and it makes the meat with a funny taste. If you doing jerky you want it open to let the moisture out anyways.  I did some pork shoulders last weekend that turned out...
