    controlling temperature on a charcoal grill when smoking meat

    Lump will burn hotter than charcoal. Start with less coals. It still won't be as easy as a smoker, but it is managable. I smoke/grill my chickens at 300 degrees, so the grill works OK, although I usually use a WSM for my birds. Practice, practice, practice!

    Pendery's Spice in Dallas/Ft. Worth have excellent spices, rubs, herbs, etc. I have always been pleased with them. Great service, too!

    Defintely a keeper! I have used crescent rolls to do that, and they worked pretty well. I like your choice of stuffing. And what doesn't taste better with gravy?

    Sausage Saturday

    I decided to clean out the deep freeze and make some sausage. Got everything ready, and then I discovered that I didn't have any casings. Oh well, bulk works for me. Ended up with 8 lbs. of breakfast sausage, 7 lbs. of italian, and about 12 lbs. of boudin. Made a few boudin balls just to sample...

    I have smoked them just like wutang, and ran my smoker about 225 -230. It does make for some great sandwiches.
