With the corn fed venision here in Iowa most of the deer we shoot, has a good flavor to it... We don't let our deer hang for more than 24-48 hours and feel than any long does not help in flavor or tender.... As stated over cooking IMHO is the best way to ruin venision and make it tough to eat...
Your fridge size is very close to mine....I'm using a 1250 watt element in mine,so far I'm very happy with my preformance.. It will climb and hold @ 300 degrees very nicely,,
The debate on what to use for a smoke generator is strong and divided..... I use a Smoke Daddy with no problems, I have a 3 inch vent with no other air in take and it works great.....
Any older fridge will do (as long as it has a metal liner in it) and the littler amount of plastic inside the better as you want to remove all of the the plastic from the inside...

I used a 1250w finned heater element I bought out of Grainer, have it wired up as the above link and I too have been amazed by the PID...
I have the chance to go to a local orchard that has done it's spring prunning... I will be getting a truck load of both pear and apple wood.. Now my question... curing the wood for a year better prior to chipping or after?.... I asume prior to chipping but it would be alot easier to store and...
