Last Thanksgiving we went to a friends house and they put bacon under the skin. Turkey was really moist and had great flavor. You know what they say, pork fat rules!!!!
I'm got the traeger going with a cornbeef, a rack of spare ribs, and a few short ribs. This is my first attempt at short ribs and I'm not sure how to tell when they are ready to come off. Do you let them start to pull back on the bone like spare ribs or go by temp? If temp, when do you pull them?
Here's a link for some Pickled Pigs Feet recipes off of Allrecipes.com. I haven't tried any of them, but they look simple enough to make. Our local Wal-Mart even have the pigs feet every so often.

Here is a good recipe for Armadillo Eggs. I've tried them with fresh jalapeno peppers and cream cheese. They are both good also.

The auger is on a timer. On high it runs all the time. On medium it runs for 2 min. then off for 2 min. On smoke it runs for 1 min off for 3 min. As for the pellets, my understanding is that they are form under high presure and the heat that creates holds them together.
